Carrot Cake Ingredients:
250g Butter
150g Sugar
4 Eggs
220g All-purpose flour
100g Walnut, chopped
100g Raisins
200g Carrots, grated
1 tsp Cinnamon
Cheese Frosting Ingredients:
150g Cream cheese
50g Sugar
2 tablespoon Softened butter
1 teaspoon Vanilla extract
Method:
Step 1. Cream butter & sugar till fluffy then add eggs one at a time.
Step 2. Add in flour, chopped walnuts, raisins, grated carrots & cinnamon and mix well mixed.
Step 3. In a separate mixer, cream ingredients cream cheese frosting until smooth and set aside for a while.
Step 4. Divide the carrot cake mixture in half, pour in first half into the pan, then pour in cream cheese mixture. Finally, add in the rest of the carrot cake mixture and try to get most of the cream cheese portion covered by the cake mixture.
Step 5. Bake for about 50-55 minutes and a toothpick inserted in the center of the cakes comes out clean.
Step 6. Frost the cake. Spread some of the cream cheese frosting over the top of the cake
